OUR HISTORY
Abbey 5 Star was established in September 1999 under the guidance of our founder, David Parkin, who drew upon over 15 years of experience in Hilton hotels, particularly in stocktaking and audit roles for Stakis. Motivated by this extensive background, our founder spearheaded the establishment of Abbey 5 Star.
By 2005, our portfolio expanded to encompass over 40 hotels, driven largely by recommendations from esteemed clients such as Chardon hotels and Hilton. Even following Chardon’s merger with Interstate Hotels, Abbey 5 Star retained its position as a trusted provider of stocktaking and auditing services, a partnership that it endures today.
Throughout its evolution, Abbey 5 Star has prioritized growth, leveraging the expertise of industry veterans including Hotel General Managers, Operations Managers, Regional Managers, and financially savvy practitioners. This blend of insight and advice, coupled with our IT solutions, has empowered us to furnish clients with superior information and analysis, facilitating impactful decision-making processes.

MANAGING DIRECTOR
In 2019, Ammar Alhassan assumed ownership of Abbey 5 Star, bringing with him a wealth of experience and a dynamic vision for the future.
As a seasoned Chartered Accountant with over 20 years of professional experience, Ammar has honed his skills across various industries. His impressive career includes executive roles such as CFO and Deputy CE at BMMI Group, where he played pivotal roles in diverse sectors such as Food and Beverage Distribution, Retailing, Hospitality, and Logistics.
Ammar’s leadership is characterized by a passion for leveraging capabilities to achieve excellence. His commitment to delivering exceptional stakeholder value is at the heart of Abbey 5 Star’s mission. Under Ammar’s guidance, we continue to evolve and innovate, setting new standards in hospitality stocktake and compliance services.
Martin Cassidy
Operations Manager
Martin Cassidy, serving as the Operations Manager at Abbey 5 Star, boasts a rich background in the hospitality industry. His journey began in pub kitchens, gradually advancing into hotels, notably at the Hinckley Island Hotel and later at Drayton Manor Hotel, where he earned multiple promotions. Martin’s tenure as Event Operations Manager at Drayton Manor Hotel paved the path for his transition to Abbey 5 Star in 2015, initially as a Stock Auditor.
With over 15 years of experience in various managerial capacities within hotel restaurants, bars, and event operations, Martin brings a depth of expertise to his role. He holds several industry-recognized qualifications, particularly in customer service, along with the prestigious BIIAB qualification for beer and cellar quality.
At Abbey 5 Star, Martin assumes responsibility for client relations and operational management, alongside other duties. He exhibits robust leadership skills, technical acumen, and is an esteemed member of the Executive team, contributing significantly to the company’s success.
MATTHEW MCSPARRON
SENIOR STOCK AUDITOR
Matthew McSparron has over 15 years of hospitality experience, including senior roles in hotel and restaurant operations. Since joining Abbey 5 Star in 2019, he has progressed to lead stock auditing across the North of England, Scotland, and Northern Ireland.
As the UAE Lead, Matthew is responsible for delivering Abbey 5 Star’s services to the highest standards, building client relationships, and ensuring operational excellence for hospitality partners across the region.
